Puebla Side Salad
- 1 cup spinach shredded
- ½ cup red pepper seeded and cut lengthwise
- ½ cup corn canned, frozen, fresh, you choose.
- ½ cup tomatoes I like cherry, but use what you like with this I just cut in half
- ½ cup avocado sliced
- ½ cup tofu crumbled
- cilantro coarsely chopped for topping
