Ingredients

Salad

  • 2 cups romaine chopped
  • 1 cup baby arugula
  • ¼ cup red peppers or use your favorite color, chopped
  • ¼ cup onion chopped
  • ½ cup jicama peeled and cubed
  • ½ cup zucchini cubed
  • ¼ cup tomatoes chopped
  • ½ cup corn
  • 2 tbsp. cilantro chopped
  • 2 tsp. nutritional yeast

Dressing

  • 1 tbsp. lime juice
  • 3 dates
  • ¼ tsp cumin
  • 1 clove garlic
  • 3 tbsp. veggie broth have more at the ready
  • ¼ tsp aminos
  • Black pepper as desired

Instructions

  • Add all dressing ingredients into high-speed blender and pulse blend to desired consistency.
  • Dump that salad in a bowl, add the dressing and toss your salad, sprinkle the nutritional yeast on top.  hehaheehehahahehehe
