I Want ToFU Salad

Yes it’s exactly what you think an obvious crude double entendre.  The name only works if you use the vegan thousand island dressing and if you don’t I’m still not going to change the damn name–it’s my salad and I’m just sharing it with you.

The vegan Thousand Island dressing is quite amazing, if I have to say so myself. I tweaked it as much as I could to get it as close to the original flavor but off just a little bit because whenever I have something that is veganized from the original and it tastes too close to the original it freaks me out a bit.

This is actually a basic salad and you can use any dressing with it. You can switch up the lettuce if you wish.  Sometimes I use two cups of arugula and one cup of iceberg or even a different type of green leafy. But you’re the boss do what you want, like I would care anyway.

  • 2 cups iceberg rough estimate
  • 1 cups arugula rough estimate
  • ¼ cups red onion chopped
  • ¼ cups red cabbage shredded
  • ¼ cups carrots
  • ¼ cups green peppers
  • 5 walnut halves
  • 1 Tbsp chia
  • 1 Tbsp hemp seeds
  • 1 cup best grains
  • 1 recipe Vegan Thousand Island Dressing

Instructions

  • Do the obvious!
