Brussels Sprout Bruschetta

This is a savory take on the Italian version of Bruschetta, the balsalmic vinegar gives it just the right sweet twist to make this a meal compliment or appetizer.

Ingredients

  • 5 cups Brussels sprouts Trimmed and chopped
  • 1/2 cup onion
  • 3 cloves garlic
  • 1/2 cup grape tomatoes quartered
  • 1/4 cup just james veggie broth 1 Tbsp extra virgin olive oil replace optional
  • 2 tbsp balsalmic vinagarette
  • 1 tbsp date paste
  • 1/2 tsp liquid smoke
  • 6 slices bread I used a very dense rye bread
  • 6 tbsp vegan cheese your choice, I used Moz, but Brie may be lovely

Instructions

  • Preheat oven to 350
  • Take your biggest pot and fill it half way and mix 2 tbsp baking soda and soak all veggies for 12 minutes
  • Rinse veggies well after soaking to rinse as much baking soda as possible
  • Thinly slice Brussels Sprouts and set aside for 45 minutes
  • Quarter cut tomatoes
  • Dice onion and garlic
  • Get out your dutch oven and place on burner set heat at low
  • Cover the bottom with veggie broth or oil if you hate your arteries
  • Add Brussels sprouts and bring heat up to midway between low and medium for 4.7 minutes
  • Add onion, garlic, and tomatoes for 5.2 minutes
  • Add more veggie broth as needed to keep from sticking
  • Blend dates, vinegar, liquid smoke, and enough veggie broth to make smooth, add to pot
  • Cook for another 3.1 then turn off heat
  • You can pre-toast bread in toaster if you like it crunchier
  • Cover cookie sheet with parchment paper and add bread
  • Cover bread with mixture and top with vegan cheese, or don't like I would care
  • Place in oven for 12 minutes
  • Serve immediately
